Château Simone, a historic estate situated in the hills just south of Aix-en-Provence, has been in the hands of four generations of the Rougier family sine 1830. It is also the rar e case in which a Provençal appellation (in this case: Palette) is a monopole—being solely owned by Château Simone. Everything here is done by hand with the utmost care, and the result is one of the benchmark wines for the region. Considered by some to be the greatest Rosé in the world, their Palette Rosé is a blend of Grenache, Mourvedre, and Cinsault, with some smaller additions of Syrah, Manosquin, Castet, Carignan, Cabernet Sauvignon, and Muscat Noir.
